Make each Sewanee School of Letters letter into a fish shape by gving it eyes and a fin or tail. Arrange them in a shape- maybe a fish shape- or anything. Keep it on the small side.

I say go with the gray since we did poypul last year. Gray w/ purple writing gets my vote.
